Today I found a Pomengranite Dressing by Marzettis that is so delicious. Here is my Healthier version of a Salad I really like. It is healthier because the salad greens are greener, therefore packed with more nutrition and I also include broccoli.
If you are not used to eating Leafy Green Lettuces, then start out with Ice Berg Lettuce and Slowly start adding Romaine Lettuce and eventually switching totally to Spinach or Spring Green Mix Lettuces.
The health benefits of the Deep Green Leafy Lettuces FAR outway Ice Berg Lettuce. It is better to start getting used to eating salads with Ice Berg and a little Spinach then no salad at all. As usual, I would rather you just begin you new healthy eating pattern and slowly add the healthier versions until you are used to it. Believe me, you will get used to it.
I used to only eat Ice Berg and NEVER Spinach or Spring Mix and now my Salads are only the Deep Green Leafy Lettuces or Spinach because it is important to me to get the added Iron and Vitamins. Ice Berg has very little health benefits compared to Spinach.
Even my husband now buys Spinach and has totally switched. He used to balk at the healthier food and now he buys it himself. Wow.
Pecan Apple Spinach Salad
On a Dinner Size Plate:
Spinach Fill the Plate 1/3 (1 to 2 Cups) full of the combined leafy greens such as:
Spring Mixed Greens (Add Ice Berg Lettuce for more crunch and slowly convert to all Spinach or Spring Mix Combination)
McIntosh Apple Cored and Slice (Keep the skins on for added nutrtion)
1/4 Cup Toasted Salted Pecans or Candied Toasted Pecans
1/2 Cup Broccoli or Broccoli Slaw
1/4 Cup Crumbled Low Fat Blue or Feta Cheese
Small Bunch of Green Grapes, sliced in half (optional)
3 ounces Chicken Breast Chunks
Marzettis Pomengranite Dressing (Raspberry Dressing can be substituted)
